Description
Crispy, golden air fryer taquitos filled with warm cinnamon-spiced apples that deliver the flavor of classic apple pie in a quick handheld dessert.
Ingredients
- 2 cups apples, peeled and diced (about 2 medium apples)
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- 2 tablespoons water
- 6 small flour tortillas (6-inch)
- 2 tablespoons melted butter
- 3 tablespoons granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- In a small saucepan over medium heat, combine diced apples, granulated sugar, brown sugar, cinnamon, lemon juice, vanilla extract, cornstarch, and water.
- Cook for 5–7 minutes, stirring occasionally, until the apples soften and the mixture thickens into a syrupy filling.
- Remove from heat and allow the apple filling to cool slightly.
- Place several spoonfuls of the apple filling along one side of each tortilla.
- Roll the tortillas tightly so they resemble taquitos.
- Brush each rolled tortilla lightly with melted butter.
- In a small bowl, mix the cinnamon and sugar for the coating and sprinkle or roll the buttered taquitos in the mixture.
- Place the taquitos seam-side down in the air fryer basket without overcrowding.
- Air fry at 375°F (190°C) for 6–8 minutes until golden brown and crispy.
- Remove from the air fryer, let cool slightly, and serve warm.
Notes
- Firm apples such as Granny Smith, Honeycrisp, or Fuji work best because they hold their shape while cooking.
- You can substitute canned apple pie filling; simply chop the apples into smaller pieces before using.
- For a richer dessert, spread a tablespoon of cream cheese inside the tortilla before adding the apple filling.
- Add chopped pecans or walnuts to the filling for extra texture.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the air fryer at 350°F (175°C) for 3–4 minutes.
- Taquitos can be frozen for up to 2 months and reheated directly from frozen in the air fryer.
