Description

Crispy, golden air fryer taquitos filled with warm cinnamon-spiced apples that deliver the flavor of classic apple pie in a quick handheld dessert.


Ingredients

  • 2 cups apples, peeled and diced (about 2 medium apples)
  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 6 small flour tortillas (6-inch)
  • 2 tablespoons melted butter
  • 3 tablespoons granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. In a small saucepan over medium heat, combine diced apples, granulated sugar, brown sugar, cinnamon, lemon juice, vanilla extract, cornstarch, and water.
  2. Cook for 5–7 minutes, stirring occasionally, until the apples soften and the mixture thickens into a syrupy filling.
  3. Remove from heat and allow the apple filling to cool slightly.
  4. Place several spoonfuls of the apple filling along one side of each tortilla.
  5. Roll the tortillas tightly so they resemble taquitos.
  6. Brush each rolled tortilla lightly with melted butter.
  7. In a small bowl, mix the cinnamon and sugar for the coating and sprinkle or roll the buttered taquitos in the mixture.
  8. Place the taquitos seam-side down in the air fryer basket without overcrowding.
  9. Air fry at 375°F (190°C) for 6–8 minutes until golden brown and crispy.
  10. Remove from the air fryer, let cool slightly, and serve warm.

Notes

  • Firm apples such as Granny Smith, Honeycrisp, or Fuji work best because they hold their shape while cooking.
  • You can substitute canned apple pie filling; simply chop the apples into smaller pieces before using.
  • For a richer dessert, spread a tablespoon of cream cheese inside the tortilla before adding the apple filling.
  • Add chopped pecans or walnuts to the filling for extra texture.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the air fryer at 350°F (175°C) for 3–4 minutes.
  • Taquitos can be frozen for up to 2 months and reheated directly from frozen in the air fryer.
