Description

A juicy, sweet-and-savory grilled halal chicken dish inspired by Hawaiian flavors, marinated in pineapple juice, soy sauce, garlic, and ginger, then grilled to perfection.


Ingredients

  • 1 whole halal chicken (about 34 lb), cut into pieces
  • 1 cup halal-certified soy sauce
  • 1 cup brown sugar
  • ½ cup ketchup (ensure no alcohol or non-halal additives)
  • ½ cup halal chicken broth
  • ¼ cup rice vinegar (or white vinegar)
  • ½ cup pineapple juice
  • 1 Tbsp freshly grated ginger
  • 2 cloves garlic, minced
  • 1 Tbsp sesame oil
  • 1 tsp halal-certified chili sauce or hot sauce (optional)
  • 1 tsp ground black pepper
  • Pineapple slices for grilling (optional)
  • Green onions, sliced for garnish

Instructions

  1. Whisk together soy sauce, brown sugar, ketchup, chicken broth, vinegar, pineapple juice, ginger, garlic, sesame oil, chili sauce (if using), and black pepper until the sugar dissolves.
  2. Reserve 1 cup of the marinade for basting during grilling.
  3. Place chicken pieces in the remaining marinade in a resealable bag or covered dish. Refrigerate for at least 4 hours or overnight.
  4. Preheat grill to medium-high heat and oil the grates.
  5. Remove chicken from marinade and discard used marinade. Grill chicken for 30–40 minutes, turning occasionally and basting with reserved marinade, until internal temperature reaches 165°F (75°C).
  6. If using, grill pineapple slices for a few minutes per side until charred.
  7. Remove chicken from grill, let rest for 5–10 minutes, garnish with green onions, and serve with optional grilled pineapple.

Notes

  • Marinate overnight for maximum flavor.
  • Boneless chicken can be used for faster cooking.
  • Lemon juice can replace vinegar for a citrusy twist.
  • Can be baked or pan-seared if a grill is not available.
