Description

A rich and comforting classic beef stroganoff made with tender beef strips, creamy mushroom sauce, and served over egg noodles.


Ingredients

  • 1 lb (450 g) beef sirloin or tenderloin, sliced into thin strips
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup (240 ml) beef broth
  • 1 cup (240 ml) sour cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 8 oz (225 g) egg noodles
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Cook the egg noodles according to package instructions, then drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add beef strips, season with salt and pepper, and cook until browned. Remove and set aside.
  3. In the same skillet, melt butter and cook the chopped onion until soft and translucent.
  4. Add garlic and mushrooms, cooking until mushrooms release moisture and become tender.
  5. Sprinkle flour over the mixture and stir well.
  6. Gradually pour in beef broth while stirring, and simmer until slightly thickened.
  7. Lower heat and stir in sour cream, Dijon mustard, and paprika until smooth.
  8. Return beef to the skillet and cook for a few minutes until heated through.
  9. Taste and adjust seasoning as needed.
  10. Serve over egg noodles and garnish with fresh parsley if desired.
