Description
A rich and comforting classic beef stroganoff made with tender beef strips, creamy mushroom sauce, and served over egg noodles.
Ingredients
- 1 lb (450 g) beef sirloin or tenderloin, sliced into thin strips
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225 g) mushrooms, sliced
- 1 tablespoon all-purpose flour
- 1 cup (240 ml) beef broth
- 1 cup (240 ml) sour cream
- 1 teaspoon Dijon mustard
- 1 teaspoon paprika
- Salt and black pepper to taste
- 8 oz (225 g) egg noodles
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Cook the egg noodles according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add beef strips, season with salt and pepper, and cook until browned. Remove and set aside.
- In the same skillet, melt butter and cook the chopped onion until soft and translucent.
- Add garlic and mushrooms, cooking until mushrooms release moisture and become tender.
- Sprinkle flour over the mixture and stir well.
- Gradually pour in beef broth while stirring, and simmer until slightly thickened.
- Lower heat and stir in sour cream, Dijon mustard, and paprika until smooth.
- Return beef to the skillet and cook for a few minutes until heated through.
- Taste and adjust seasoning as needed.
- Serve over egg noodles and garnish with fresh parsley if desired.
Notes
- You can substitute beef with chicken or ground beef for variation.
- Add Worcestershire sauce or a splash of white wine for deeper flavor.
- Greek yogurt can be used instead of sour cream for a lighter version.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat gently over low heat with a splash of broth or water to maintain sauce texture.
- Lower heat before adding sour cream to prevent curdling.
