Ingredients
- 1¾ cups (220g) all-purpose flour
- 2 cups (400g) granulated sugar
- ¾ cup (75g) unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup (240ml) whole milk
- ½ cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
- 1 cup (230g) unsalted butter, softened
- 1¼ cups (95g) unsweetened cocoa powder (for frosting)
- 5 cups (600g) powdered sugar
- ½ cup (120ml) milk (for frosting)
- 2 teaspoons vanilla extract (for frosting)
- ¼ teaspoon salt (for frosting)
Instructions
- Preheat oven to 175°C (350°F) and grease two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
- Slowly pour in boiling water and stir until fully combined (batter will be thin).
- Divide batter evenly between prepared pans.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool completely before frosting.
- For frosting, beat softened butter until creamy.
- Add cocoa powder and mix well.
- Gradually add powdered sugar and milk alternately, beating until smooth and fluffy.
- Mix in vanilla extract and salt.
- Spread frosting between cake layers, then frost the top and sides generously.

- Batter will be thin due to boiling water—this ensures a moist cake.
- Add espresso powder to enhance chocolate flavor.
- Chocolate ganache can be added between layers for extra richness.
- Store covered at room temperature for 2 days or refrigerate up to 5 days.
