Description

A rich, moist, and deeply chocolatey Matilda-inspired cake layered with a silky, luscious chocolate frosting—perfectly indulgent and decadent.

Ingredients

  • 1¾ cups (220g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water
  • 1 cup (230g) unsalted butter, softened
  • 1¼ cups (95g) unsweetened cocoa powder (for frosting)
  • 5 cups (600g) powdered sugar
  • ½ cup (120ml) milk (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)

Instructions

  1. Preheat oven to 175°C (350°F) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Slowly pour in boiling water and stir until fully combined (batter will be thin).
  5. Divide batter evenly between prepared pans.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool completely before frosting.
  8. For frosting, beat softened butter until creamy.
  9. Add cocoa powder and mix well.
  10. Gradually add powdered sugar and milk alternately, beating until smooth and fluffy.
  11. Mix in vanilla extract and salt.
  12. Spread frosting between cake layers, then frost the top and sides generously.

Notes

  • Batter will be thin due to boiling water—this ensures a moist cake.
  • Add espresso powder to enhance chocolate flavor.
  • Chocolate ganache can be added between layers for extra richness.
  • Store covered at room temperature for 2 days or refrigerate up to 5 days.
  • Let cake sit at room temperature before serving for best texture.
  • Microwave slices for 10–15 seconds for a warm treat.
