Description

Soft, chewy, bakery-style birthday cake cookies packed with vanilla flavor, rainbow sprinkles, and white chocolate chips for a festive treat that is easy to make and perfect for celebrations.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract (optional)
  • 1/2 cup rainbow sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract until smooth and fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and stir until a soft cookie dough forms.
  6. Fold in the rainbow sprinkles and white chocolate chips until evenly distributed.
  7. Scoop about 2 tablespoons of dough per cookie and place the dough balls on the prepared baking sheet, leaving space between each one.
  8. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are still soft.
  9. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Jimmies-style sprinkles work best because they hold their color and texture during baking.
  • For thicker cookies, chill the dough for 30 minutes before baking.
  • You can refrigerate the dough for up to 24 hours before baking.
  • Freeze scooped dough balls and bake from frozen, adding 1 to 2 minutes to the baking time.
  • Swap white chocolate chips for milk chocolate chips or birthday cake flavored chips for a different flavor.
  • Store baked cookies in an airtight container at room temperature for up to 4 days.
  • Freeze baked cookies in a freezer-safe bag for up to 2 months.
  • Reheat a cookie in the microwave for about 10 seconds to soften it.
