Description

These Blueberry Cheesecake Protein Bites are creamy, sweet, and packed with protein. Bursting with juicy blueberries and rich cheesecake flavor, they make the perfect no-bake snack, dessert, or grab-and-go breakfast.


Ingredients

  • 1 cup vanilla protein powder
  • 4 oz (113 g) cream cheese, softened
  • 1/2 cup fresh or frozen blueberries, finely chopped
  • 2 tablespoons honey or maple syrup
  • 1/2 cup almond flour
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Place the softened cream cheese in a mixing bowl and stir until smooth and creamy.
  2. Add honey (or maple syrup), vanilla extract, lemon juice, and salt. Mix until well combined.
  3. Stir in the protein powder and almond flour until a thick dough forms.
  4. If the mixture is too dry, add milk 1 teaspoon at a time. If too sticky, add a little more almond flour.
  5. Gently fold in the finely chopped blueberries without overmixing.
  6. Scoop about 1 tablespoon of mixture and roll into bite-sized balls.
  7. Place on a lined tray and refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Use thawed and well-drained frozen blueberries to avoid excess moisture.
  • Chill the mixture for 15–20 minutes if it is too sticky to roll.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 2 months and thaw before serving.
  • Adjust sweetness by adding 1–2 extra teaspoons of honey or maple syrup if desired.
