These Blueberry Cheesecake Protein Bites are creamy, sweet, and packed with protein. Bursting with juicy blueberries and rich cheesecake flavor, they make the perfect no-bake snack, dessert, or grab-and-go breakfast.
Ingredients
- 1 cup vanilla protein powder
- 4 oz (113 g) cream cheese, softened
- 1/2 cup fresh or frozen blueberries, finely chopped
- 2 tablespoons honey or maple syrup
- 1/2 cup almond flour
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- Place the softened cream cheese in a mixing bowl and stir until smooth and creamy.
- Add honey (or maple syrup), vanilla extract, lemon juice, and salt. Mix until well combined.
- Stir in the protein powder and almond flour until a thick dough forms.
- If the mixture is too dry, add milk 1 teaspoon at a time. If too sticky, add a little more almond flour.
- Gently fold in the finely chopped blueberries without overmixing.
- Scoop about 1 tablespoon of mixture and roll into bite-sized balls.
- Place on a lined tray and refrigerate for at least 30 minutes to firm up before serving.
Notes
- Use thawed and well-drained frozen blueberries to avoid excess moisture.
- Chill the mixture for 15–20 minutes if it is too sticky to roll.
- Store in an airtight container in the refrigerator for up to 5 days.
- Freeze for up to 2 months and thaw before serving.
- Adjust sweetness by adding 1–2 extra teaspoons of honey or maple syrup if desired.
