Description

Brazilian Coconut Chicken is a flavorful dish featuring tender chicken simmered in a rich, creamy coconut sauce infused with garlic, ginger, and spices. It’s inspired by traditional Brazilian flavors and typically served with rice.


Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp lime juice
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and brown on all sides. Remove and set aside.
  3. In the same skillet, add chopped onion and sauté until soft.
  4. Add garlic and ginger, cook for 1 minute until fragrant.
  5. Stir in coriander, cumin, turmeric, paprika, and cayenne. Cook for 1 more minute.
  6. Return the chicken to the pan and stir to coat with the spices.
  7. Pour in the coconut milk and bring to a simmer. Reduce heat to low, cover, and cook for 20–25 minutes until the chicken is tender and fully cooked.
  8. Stir in lime juice and adjust seasoning with salt and pepper.
  9. Serve hot over rice and garnish with fresh cilantro.

Notes

  • You can substitute chicken thighs with chicken breasts for a leaner option.
  • Adjust spice levels to your taste by increasing or decreasing cayenne pepper.
  • This dish pairs well with white rice or cauliflower rice for a lower-carb option.
