Ingredients
- 1 cup unsalted butter
- 1 cup brown sugar, packed
- 1/4 cup honey
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup shelled pistachios, roughly chopped
- 1/2 cup white chocolate chips (optional)
Instructions
- Brown the butter in a saucepan over medium heat, stirring constantly until golden brown and fragrant. Let it cool slightly.
- In a large bowl, mix browned butter, brown sugar, granulated sugar, and honey until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Fold in chopped pistachios and white chocolate chips if using.
- Spread the dough evenly into a lined or greased 9×13-inch baking pan.
- Bake at 175°C (350°F) for 20–25 minutes, until golden on top and a toothpick comes out with moist crumbs.
- Cool completely before slicing into bars.
Notes
- Browning the butter enhances flavor—do not skip if possible.
- Reduce added salt if using salted pistachios.
- Bars continue to firm up as they cool.
- Can substitute dark chocolate for white chocolate.
- Add spices like cinnamon or cardamom for variation.
