Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups Cadbury Mini Eggs, roughly chopped
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a soft cookie dough forms.
- Fold in the chopped Cadbury Mini Eggs and chocolate chips, if using.
- Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are still soft.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Notes
- Chopping the Cadbury Mini Eggs helps distribute the chocolate more evenly throughout the dough.
- For thicker cookies, chill the dough for 20 to 30 minutes before baking.
- White chocolate chips or milk chocolate chunks can be added for extra richness.
- A light sprinkle of sea salt on top before baking balances the sweetness nicely.
- Store in an airtight container at room temperature for up to 4 days.
- Freeze baked cookies or unbaked dough for up to 2 months.
- Warm a cookie in the microwave for about 10 seconds to soften the chocolate before serving.
