Description
Savory, cheesy biscuits (crackers) that are crisp on the outside and tender inside — known as “busters” because one is often not enough.
Ingredients
- 8 tablespoons butter, cut into ¼‑inch dice
- 2 cups all‑purpose flour
- 1 teaspoon salt
- 3½ cups shredded cheddar cheese (loosely packed)
- 6 to 7 tablespoons water
- ⅛ teaspoon cayenne pepper
Instructions
- Preheat the oven to 450 °F (≈ 230 °C). Line a baking sheet with parchment paper (or lightly grease it).
- In a bowl, combine the flour and salt.
- Add the diced butter and rub it into the flour with your fingertips until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese and the cayenne pepper.
- Add 6 tablespoons of water gradually, stirring with a fork, until the dough just comes together. If needed, add the 7th tablespoon of water.
- Turn the dough onto a lightly floured surface. Roll it out to about ¼‑inch thickness.
- Use a 3‑inch round cutter (or similar) to cut out the biscuits. Re‑roll scraps and cut more.
- Place the rounds on the prepared baking sheet. Prick each biscuit ~10 times with a fork to prevent puffing.
- Bake for 15 minutes, until they are golden and crisp.
- Remove from oven and let them sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool.
Notes
- Use a sharp, flavorful cheddar for best taste.
- Keep the butter cold so the dough yields better texture.
- You can add herbs (e.g. thyme, chives) or swap in another hard cheese for variation.
- Store in an airtight container for several days.
- One recipe yields about 16 biscuits. :contentReference[oaicite:0]{index=0}
