Description

These cheesy ground beef enchiladas are the ultimate comfort food—rich, satisfying, and bursting with flavor. Flour tortillas are filled with seasoned ground beef and gooey cheese, topped with enchilada sauce, and baked until golden and bubbly.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 6 flour tortillas
  • 2 cups shredded mozzarella or cheese blend
  • 2 cups enchilada sauce (homemade or store-bought)
  • Fresh parsley or cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté chopped onions until soft.
  3. Add ground beef and cook until browned, breaking it apart. Season with garlic, salt, and pepper.
  4. Drain any excess fat from the skillet.
  5. Lay out each tortilla and fill with the beef mixture and some shredded cheese. Roll tightly.
  6. Spread a layer of enchilada sauce in a baking dish and place rolled tortillas seam side down.
  7. Pour the remaining enchilada sauce over the tortillas and sprinkle with remaining cheese.
  8. Bake uncovered for 20 minutes or until the cheese is bubbly and golden brown.
  9. Garnish with fresh parsley or cilantro before serving.
