Description

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried parsley
  • 1 cup frozen corn (optional)
  • 1/2 cup diced carrots (optional)

Instructions

  1. Cook ground beef in a large pot over medium heat until browned. Drain excess fat.
  2. Add chopped onion and garlic, cook until softened and fragrant.
  3. Stir in potatoes, chicken broth, salt, pepper, paprika, and parsley. Bring to a boil.
  4. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  5. In a separate pan, melt butter and whisk in flour to make a roux. Cook for 1 minute.
  6. Slowly whisk in milk and cream until smooth and slightly thickened.
  7. Add the creamy mixture to the soup and stir well.
  8. Add shredded cheddar cheese and stir until fully melted.
  9. Add corn and carrots if using, and simmer for another 5 minutes.
  10. Taste and adjust seasoning, then serve hot.

  • Use freshly shredded cheese for smoother melting.
  • Adjust thickness by adding more broth or mashing potatoes.
  • For extra richness, add a bit of cream cheese.
