A rich and comforting cheesy hamburger potato soup made with ground beef, tender potatoes, and a creamy cheddar base—perfect for a hearty, cozy meal.
Ingredients
- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried parsley
- 1 cup frozen corn (optional)
- 1/2 cup diced carrots (optional)
Instructions
- Cook ground beef in a large pot over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic, cook until softened and fragrant.
- Stir in potatoes, chicken broth, salt, pepper, paprika, and parsley. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- In a separate pan, melt butter and whisk in flour to make a roux. Cook for 1 minute.
- Slowly whisk in milk and cream until smooth and slightly thickened.
- Add the creamy mixture to the soup and stir well.
- Add shredded cheddar cheese and stir until fully melted.
- Add corn and carrots if using, and simmer for another 5 minutes.
- Taste and adjust seasoning, then serve hot.
Notes
- Use freshly shredded cheese for smoother melting.
- Adjust thickness by adding more broth or mashing potatoes.
- For extra richness, add a bit of cream cheese.
- Freeze before adding dairy for best texture.
