Description

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 cup sour cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp chopped parsley (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef, breaking it apart as it cooks. Drain excess fat and set aside.
  2. In the same pot, melt butter and sauté the chopped onion until soft. Add garlic and cook for 1 minute until fragrant.
  3. Stir in the flour to form a roux and cook for about 1 minute.
  4. Slowly pour in the chicken broth while stirring to avoid lumps.
  5. Add diced potatoes, salt, pepper, and paprika. Simmer for 15–20 minutes until potatoes are tender.
  6. Return the cooked beef to the pot and add the milk. Heat gently.
  7. Stir in shredded cheddar cheese until melted and smooth.
  8. Add sour cream and mix until fully combined and creamy.
  9. Taste and adjust seasoning if needed. Serve hot, garnished with parsley if desired.

  • Swap ground beef with ground turkey for a lighter version.
  • Include carrots or celery for extra vegetables.
