Ingredients
- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 cup sour cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp chopped parsley (optional)
Instructions
- In a large pot over medium heat, brown the ground beef, breaking it apart as it cooks. Drain excess fat and set aside.
- In the same pot, melt butter and sauté the chopped onion until soft. Add garlic and cook for 1 minute until fragrant.
- Stir in the flour to form a roux and cook for about 1 minute.
- Slowly pour in the chicken broth while stirring to avoid lumps.
- Add diced potatoes, salt, pepper, and paprika. Simmer for 15–20 minutes until potatoes are tender.
- Return the cooked beef to the pot and add the milk. Heat gently.
- Stir in shredded cheddar cheese until melted and smooth.
- Add sour cream and mix until fully combined and creamy.
- Taste and adjust seasoning if needed. Serve hot, garnished with parsley if desired.
Notes
- Swap ground beef with ground turkey for a lighter version.
- Include carrots or celery for extra vegetables.
- Add chili flakes or jalapeños for heat.
- Mash some potatoes to naturally thicken the soup.
- Freeze before adding dairy for better texture when reheating.
