Description

A creamy, comforting chicken, broccoli, and rice casserole perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 2 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a large bowl, combine cooked chicken, cooked rice, and steamed broccoli.
  3. In a separate bowl, mix together cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper.
  4. Pour the sauce over the chicken, rice, and broccoli mixture and stir until evenly coated.
  5. Transfer the mixture to a greased casserole dish.
  6. Sprinkle shredded cheddar cheese evenly on top, then sprinkle Parmesan cheese.
  7. Bake in the preheated oven for 25–30 minutes or until heated through and cheese is bubbly.
  8. Let rest for 5 minutes before serving.

Notes

  • For extra flavor, sauté onions and garlic in olive oil before mixing.
  • Substitute Greek yogurt for sour cream to reduce fat.
  • Add breadcrumbs on top for a crunchy topping.
  • Can be made ahead and refrigerated before baking.
