A creamy, comforting chicken, broccoli, and rice casserole perfect for family dinners.
Ingredients
- 2 cups cooked chicken, shredded or cubed
- 2 cups cooked rice
- 2 cups broccoli florets, steamed
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Preheat oven to 180°C (350°F).
- In a large bowl, combine cooked chicken, cooked rice, and steamed broccoli.
- In a separate bowl, mix together cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper.
- Pour the sauce over the chicken, rice, and broccoli mixture and stir until evenly coated.
- Transfer the mixture to a greased casserole dish.
- Sprinkle shredded cheddar cheese evenly on top, then sprinkle Parmesan cheese.
- Bake in the preheated oven for 25–30 minutes or until heated through and cheese is bubbly.
- Let rest for 5 minutes before serving.
Notes
- For extra flavor, sauté onions and garlic in olive oil before mixing.
- Substitute Greek yogurt for sour cream to reduce fat.
- Add breadcrumbs on top for a crunchy topping.
- Can be made ahead and refrigerated before baking.
