Description

Creamy, naturally sweet frozen banana bites filled with a peanut butter Greek yogurt mixture and coated in a thin dark chocolate shell for a refreshing no-bake treat.


Ingredients

  • 1 cup Greek yogurt
  • 2 ripe bananas, sliced into rounds
  • 1/2 cup creamy peanut butter
  • 1 tablespoon honey or maple syrup
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. Slice the bananas into even rounds and set aside.
  3. In a medium bowl, mix the Greek yogurt, peanut butter, and honey or maple syrup until smooth and creamy.
  4. Spread a small amount of the yogurt mixture onto one banana slice, then top with another banana slice to make a sandwich.
  5. Place the banana bites on the prepared baking sheet and freeze for 1 to 2 hours, or until firm.
  6. Melt the dark chocolate chips with the coconut oil, stirring until smooth.
  7. Dip each frozen banana bite into the melted chocolate until coated, then return it to the lined tray.
  8. Freeze again for 15 to 20 minutes, or until the chocolate shell is set.
  9. Serve straight from the freezer, letting the bites sit at room temperature for 1 to 2 minutes if desired.
