Creamy, naturally sweet frozen banana bites filled with a peanut butter Greek yogurt mixture and coated in a thin dark chocolate shell for a refreshing no-bake treat.
Ingredients
- 1 cup Greek yogurt
- 2 ripe bananas, sliced into rounds
- 1/2 cup creamy peanut butter
- 1 tablespoon honey or maple syrup
- 1 cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line a baking sheet or tray with parchment paper.
- Slice the bananas into even rounds and set aside.
- In a medium bowl, mix the Greek yogurt, peanut butter, and honey or maple syrup until smooth and creamy.
- Spread a small amount of the yogurt mixture onto one banana slice, then top with another banana slice to make a sandwich.
- Place the banana bites on the prepared baking sheet and freeze for 1 to 2 hours, or until firm.
- Melt the dark chocolate chips with the coconut oil, stirring until smooth.
- Dip each frozen banana bite into the melted chocolate until coated, then return it to the lined tray.
- Freeze again for 15 to 20 minutes, or until the chocolate shell is set.
- Serve straight from the freezer, letting the bites sit at room temperature for 1 to 2 minutes if desired.
Notes
- Almond butter or hazelnut spread can be used instead of peanut butter.
- For extra texture, top the bites with crushed nuts, granola, or a pinch of sea salt before the chocolate sets.
- Flavored Greek yogurt can be used, but reduce or omit the added sweetener to keep the flavor balanced.
- For a dairy-free version, use a dairy-free yogurt alternative.
