Description
A cozy and moist Cinnamon Roll Banana Bread featuring ripe bananas and a rich cinnamon-sugar swirl, topped with an optional sweet vanilla glaze. Perfect for breakfast, dessert, or an afternoon treat.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup brown sugar (for swirl)
- 1 tablespoon ground cinnamon
- 2 tablespoons melted butter (for swirl)
- 1/2 cup powdered sugar (optional glaze)
- 1–2 tablespoons milk (optional glaze)
- 1/4 teaspoon vanilla extract (optional glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mash the bananas until smooth. Stir in melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and sour cream until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold dry ingredients into wet ingredients until just combined.
- In a small bowl, mix brown sugar, cinnamon, and melted butter to create the cinnamon swirl paste.
- Pour half the batter into the prepared pan. Spread half of the cinnamon mixture over it and swirl gently with a knife. Repeat with remaining batter and cinnamon mixture.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if browning too quickly.
- Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- If desired, whisk together powdered sugar, milk, and vanilla extract and drizzle over cooled bread.
Notes
- Add chopped walnuts or pecans for extra crunch.
- Mix in mini chocolate chips for added sweetness.
- Add a pinch of nutmeg for deeper spice flavor.
- For muffins, bake at 350°F for 18–22 minutes.
- Store tightly wrapped at room temperature for up to 3 days, refrigerate up to 1 week, or freeze slices up to 3 months.
