Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup unsalted butter, cold and cut into cubes
- 6 to 8 tablespoons ice water
- 6 cups apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (optional, for sprinkling)
Instructions
- In a large bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough holds together.
- Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- In another bowl, toss sliced apples with both sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla. Let sit for 15 minutes.
- Roll out one dough disc into a 12-inch circle and fit into a 9-inch pie plate, trimming edges to leave ½ inch overhang.
- Pour apple filling into the crust. Roll out the second dough disc and place over the filling. Trim, fold, and crimp edges to seal. Cut slits in the top crust.
- Brush top with beaten egg and sprinkle with coarse sugar. Bake at 425°F (220°C) for 15 minutes, then reduce heat to 375°F (190°C) and bake for 40–45 minutes until golden and bubbly.
- Cool on a wire rack for at least 2 hours before slicing.
Notes
- Use a mix of apple varieties for a more complex flavor.
- Add ground ginger or cloves for extra spice.
- Store-bought crust can be used in a pinch, but homemade yields best results.
- Cool pie completely before slicing to help the filling set properly.
- Freeze unbaked pie for up to 3 months and bake from frozen, adding 15–20 minutes to bake time.
