Description

A timeless dessert featuring a flaky, buttery crust filled with tender, cinnamon-spiced apples. Perfect for holidays, family gatherings, or cozy weekends.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, cold and cut into cubes
  • 6 to 8 tablespoons ice water
  • 6 cups apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. In a large bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough holds together.
  2. Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  3. In another bowl, toss sliced apples with both sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla. Let sit for 15 minutes.
  4. Roll out one dough disc into a 12-inch circle and fit into a 9-inch pie plate, trimming edges to leave ½ inch overhang.
  5. Pour apple filling into the crust. Roll out the second dough disc and place over the filling. Trim, fold, and crimp edges to seal. Cut slits in the top crust.
  6. Brush top with beaten egg and sprinkle with coarse sugar. Bake at 425°F (220°C) for 15 minutes, then reduce heat to 375°F (190°C) and bake for 40–45 minutes until golden and bubbly.
  7. Cool on a wire rack for at least 2 hours before slicing.

Notes

  • Use a mix of apple varieties for a more complex flavor.
  • Add ground ginger or cloves for extra spice.
  • Store-bought crust can be used in a pinch, but homemade yields best results.
  • Cool pie completely before slicing to help the filling set properly.
