Description

Soft, fluffy cottage cheese biscuits with a light tang and tender texture, perfect for quick homemade baking.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup cottage cheese
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Add cold butter and mix using fingers or a pastry cutter until the mixture becomes crumbly.
  4. Stir in cottage cheese and milk until just combined into a dough. Do not overmix.
  5. Turn the dough onto a lightly floured surface and gently pat to about 2 cm (3/4 inch) thickness.
  6. Cut out biscuits using a round cutter and place on the prepared baking sheet.
  7. Bake for 15–18 minutes or until golden on top.
  8. Serve warm.
