Description

A creamy, protein-packed cottage cheese peanut butter mousse that tastes indulgent yet is made with simple, wholesome ingredients. This no-bake treat comes together in minutes and makes a satisfying dessert, snack, or even breakfast.

Ingredients

  • 1 cup full-fat cottage cheese
  • 1/2 cup natural peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 to 2 tablespoons milk (as needed for blending)
  • Pinch of salt

Instructions

  1. Add the cottage cheese, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt to a high-speed blender or food processor.
  2. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. If the mousse is too thick, add 1 tablespoon of milk at a time and blend again until the desired consistency is reached.
  4. Taste and adjust sweetness if necessary.
  5. Spoon into serving bowls and refrigerate for at least 30 minutes to firm up and develop flavor before serving.

Notes

  • For a chocolate version, blend in 1 tablespoon cocoa powder.
  • Fold in mini dark chocolate chips for added texture.
  • Swap peanut butter with almond or cashew butter for a different flavor profile.
  • Blend in strawberries or top with sliced bananas or berries for a fruity twist.
  • Store in an airtight container in the refrigerator for up to 3 days and stir before serving.
  • Freezing is possible, but texture may change slightly after thawing.
