Description

A warm and comforting casserole made with tender cooked chicken, a creamy seasoned sauce, and savory stuffing baked until hot and golden.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (optional, to taste)
  • 1 cup frozen mixed vegetables (optional)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a baking dish.
  2. In a large bowl, mix the cream of chicken soup, sour cream, milk, chicken broth, garlic powder, onion powder, salt, and black pepper until smooth.
  3. Fold in the cooked chicken and frozen mixed vegetables, if using.
  4. Prepare the stuffing mix according to the package instructions, typically using hot water and the melted butter.
  5. Spread the chicken mixture evenly into the prepared baking dish.
  6. Layer the prepared stuffing evenly over the top.
  7. Bake uncovered for 30 to 35 minutes, until hot and bubbly and lightly golden on top.
  8. Let the casserole rest for a few minutes before serving.

Notes

  • Rotisserie chicken works well for extra flavor and convenience.
  • Cream of mushroom soup can be used instead of cream of chicken soup for a different flavor.
  • Add about 1 cup of shredded cheese on top or into the filling for a richer casserole.
  • You can assemble the casserole ahead of time and refrigerate it until ready to bake.
  • Freeze before or after baking for up to 2 months.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat covered in the oven at 160°C (320°F) or microwave individual portions with a splash of milk to keep it creamy.
  • Avoid overbaking to prevent the casserole from drying out.
