Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 box (6 oz) stuffing mix
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (optional, to taste)
- 1 cup frozen mixed vegetables (optional)
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a baking dish.
- In a large bowl, mix the cream of chicken soup, sour cream, milk, chicken broth, garlic powder, onion powder, salt, and black pepper until smooth.
- Fold in the cooked chicken and frozen mixed vegetables, if using.
- Prepare the stuffing mix according to the package instructions, typically using hot water and the melted butter.
- Spread the chicken mixture evenly into the prepared baking dish.
- Layer the prepared stuffing evenly over the top.
- Bake uncovered for 30 to 35 minutes, until hot and bubbly and lightly golden on top.
- Let the casserole rest for a few minutes before serving.
Notes
- Rotisserie chicken works well for extra flavor and convenience.
- Cream of mushroom soup can be used instead of cream of chicken soup for a different flavor.
- Add about 1 cup of shredded cheese on top or into the filling for a richer casserole.
- You can assemble the casserole ahead of time and refrigerate it until ready to bake.
- Freeze before or after baking for up to 2 months.
