Description
A cozy, creamy chicken stroganoff with tender chicken pieces and mushrooms in a tangy sour cream sauce—ready in just 30 minutes.
Ingredients
- 2 chicken breasts, cut into 1‑inch pieces
- ½ teaspoon garlic powder
- Salt & pepper, to taste
- Flour, for dredging
- 3 tablespoons olive oil (divided)
- 1 tablespoon butter
- 8 ounces cremini mushrooms, sliced
- ½ medium onion, chopped
- 1 tablespoon Dijon mustard (or more, to taste)
- 1 tablespoon Worcestershire sauce (or more, to taste)
- 3 cloves garlic, minced
- ⅔ cup chicken broth
- ½ cup full‑fat sour cream
Instructions
- Cut chicken into 1″ pieces, season with garlic powder, salt, and pepper, then coat in flour.
- Heat 2 tablespoons olive oil in a deep skillet over medium‑high heat. Working in batches, cook chicken until lightly browned and cooked through (about 3 minutes per side), adding more oil if needed. Transfer to a plate.
- In the same pan, melt the butter, then add mushrooms and onions. Sauté for 6–8 minutes until water is released and they get a nice sear.
- Stir in Dijon mustard, Worcestershire sauce, and garlic. Cook for about 1 minute.
- Add chicken broth, scraping up browned bits from the bottom of the pan. Return chicken to the pan and cook for 2 minutes, stirring occasionally.
- Reduce heat to low, stir in sour cream gently (avoid boiling to prevent curdling), heat through for about 1 minute. Season with more salt and pepper as needed. Serve immediately.
Notes
- Recipe update on June 27, 2021: increased Dijon mustard and Worcestershire sauce quantities based on reader feedback.
- Store leftovers in an airtight container in the refrigerator for 3–4 days. Reheat slowly over low heat.
- Freezing is not recommended, as the texture may change.
- For extra flavor, add a pinch of nutmeg to the sauce or top with fresh parsley or paprika.
