Ingredients
- 2 pounds ground beef (preferably 80/20)
- 1 cup breadcrumbs (plain or Italian-style)
- 2 large eggs
- 1/2 cup milk
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup ketchup (plus more for topping)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley (optional)
Instructions
- Line the crockpot with parchment paper or spray it with non-stick cooking spray.
- In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix gently until just combined.
- Shape the mixture into a loaf and place it in the center of the crockpot.
- Spread a layer of ketchup over the top of the meatloaf.
- Cover and cook on low for 6 hours or high for 3–4 hours, until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- Add hot sauce or chopped jalapeños for a spicy version.
- Swap ketchup with barbecue sauce or tomato-brown sugar glaze for a different topping.
- Substitute almond flour or for a low-carb version.
- Use a meat thermometer to ensure it reaches 160°F internally.
