Description
Tender sirloin steak bites slow-cooked in a rich au jus gravy with onions, garlic, and butter—an easy, hearty, and family-friendly meal perfect for busy weeknights.
Ingredients
- 3 lb sirloin steak, cut into ~1‑inch bite-sized pieces
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 Tbsp vegetable oil (or olive/avocado oil)
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock
- 1 (1‑oz) packet au jus gravy mix
- 4 Tbsp unsalted butter, sliced thinly
- Fresh chopped parsley, optional garnish
Instructions
- Toss cubed steak with salt and pepper in a large bowl.
- Heat half the oil in a skillet over medium-high heat and sear the steak in batches until browned, then transfer to the slow cooker.
- Add onions and garlic to the crockpot and toss with steak.
- Pour in beef stock, sprinkle au jus mix on top, and dot with butter slices.
- Cover and cook on high for 3–4 hours or low for 6–8 hours. Stir gently every 30 minutes if possible.
- Garnish with parsley before serving, if desired.
Notes
- You can skip searing for a quicker prep, though it enhances flavor.
- Adding thyme, rosemary, or mushrooms enhances aroma and texture.
- Stir in a cornstarch slurry for thicker gravy near the end of cooking.
- Leftovers freeze well and reheat best on the stove with a splash of broth.
- Serve over mashed potatoes, egg noodles, or with roasted veggies.
