Description

Tender sirloin steak bites slow-cooked in a rich au jus gravy with onions, garlic, and butter—an easy, hearty, and family-friendly meal perfect for busy weeknights.


Ingredients

  • 3 lb sirloin steak, cut into ~1‑inch bite-sized pieces
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 Tbsp vegetable oil (or olive/avocado oil)
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock
  • 1 (1‑oz) packet au jus gravy mix
  • 4 Tbsp unsalted butter, sliced thinly
  • Fresh chopped parsley, optional garnish

Instructions

  1. Toss cubed steak with salt and pepper in a large bowl.
  2. Heat half the oil in a skillet over medium-high heat and sear the steak in batches until browned, then transfer to the slow cooker.
  3. Add onions and garlic to the crockpot and toss with steak.
  4. Pour in beef stock, sprinkle au jus mix on top, and dot with butter slices.
  5. Cover and cook on high for 3–4 hours or low for 6–8 hours. Stir gently every 30 minutes if possible.
  6. Garnish with parsley before serving, if desired.

Notes

  • You can skip searing for a quicker prep, though it enhances flavor.
  • Adding thyme, rosemary, or mushrooms enhances aroma and texture.
  • Stir in a cornstarch slurry for thicker gravy near the end of cooking.
  • Leftovers freeze well and reheat best on the stove with a splash of broth.
  • Serve over mashed potatoes, egg noodles, or with roasted veggies.
