Description

A tropical-inspired slow cooker dish made with tender chicken, sweet pineapple, and a savory-sweet sauce. Perfect for busy weeknights, this easy Crockpot Sweet Hawaiian Chicken is flavorful, family-friendly, and pairs perfectly with rice or veggies.


Ingredients

  • 2 pounds boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 cup pineapple chunks (canned or fresh)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooked white rice, for serving (optional)

Instructions

  1. Add the chicken pieces into the crockpot.
  2. In a bowl, mix together pineapple juice, brown sugar, soy sauce, garlic powder, salt, and pepper until well combined.
  3. Pour the sauce mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. 30 minutes before the cooking time ends, stir in the bell peppers and pineapple chunks.
  6. Mix cornstarch and water in a small bowl until smooth, then stir into the crockpot to thicken the sauce.
  7. Cover again and cook for the final 30 minutes.
  8. Once sauce is thickened and chicken is tender, serve hot over cooked white rice.

  • Include extra vegetables like snap peas, onions, or carrots for variety.
