Ingredients
- 2 pounds boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 cup pineapple chunks (canned or fresh)
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Cooked white rice, for serving (optional)
Instructions
- Add the chicken pieces into the crockpot.
- In a bowl, mix together pineapple juice, brown sugar, soy sauce, garlic powder, salt, and pepper until well combined.
- Pour the sauce mixture over the chicken in the crockpot.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- 30 minutes before the cooking time ends, stir in the bell peppers and pineapple chunks.
- Mix cornstarch and water in a small bowl until smooth, then stir into the crockpot to thicken the sauce.
- Cover again and cook for the final 30 minutes.
- Once sauce is thickened and chicken is tender, serve hot over cooked white rice.
