Description

A rich and moist chocolate cake infused with fresh strawberries, topped with a creamy chocolate frosting and finished with fresh strawberry slices for a perfect balance of indulgence and freshness.

Ingredients

  • 1 ¾ cups (220 g) all-purpose flour
  • ¾ cup (75 g) unsweetened cocoa powder
  • 2 cups (400 g) granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240 ml) whole milk
  • ½ cup (120 ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) hot water or hot coffee
  • 1 ½ cups (225 g) fresh strawberries, chopped
  • For the frosting:
  • 1 cup (230 g) unsalted butter, softened
  • 3 ½ cups (440 g) powdered sugar
  • ½ cup (50 g) cocoa powder
  • 23 tablespoons (30–45 ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) fresh strawberries, sliced (for topping)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease two 9-inch round cake pans.
  2. In a large bowl, mix the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract, and mix until smooth.
  4. Slowly pour in the hot water or coffee and stir until the batter is thin and well combined.
  5. Gently fold in the chopped strawberries.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool completely before frosting.
  9. For the frosting, beat the butter until creamy.
  10. Gradually add powdered sugar and cocoa powder, mixing well.
  11. Add cream and vanilla extract, and beat until smooth and spreadable.
  12. Frost the first cake layer, place the second layer on top, and frost the entire cake.
  13. Decorate with fresh strawberry slices and serve.

Notes

  • Use hot coffee to enhance the chocolate flavor without adding a strong coffee taste.
  • Ensure strawberries are dry to avoid excess moisture in the batter.
  • Do not overmix the batter to keep the cake soft and tender.
  • You can add a layer of strawberry jam between cake layers for extra flavor.
  • Let the cake cool completely before frosting to prevent melting.
