Ingredients
- 2 pie crusts (store-bought or homemade)
- 1/2 cup brown sugar
- 1/2 cup corn syrup (or maple syrup as variation)
- 2 tbsp butter, melted
- 2 eggs, beaten
- 1 tsp vanilla extract
- 3/4 cup chopped pecans
- Vegetable oil, for frying
- Powdered sugar, for dusting (optional)
Instructions
- In a bowl, mix brown sugar, corn syrup, melted butter, beaten eggs, vanilla extract, and chopped pecans until well combined.
- Roll out the pie crusts and cut into 4–5 inch circles.
- Place a spoonful of filling in the center of each circle, avoiding overfilling.
- Fold each circle in half and press edges with a fork to seal tightly.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry pies in batches for 2–3 minutes per side or until golden brown.
- Transfer to paper towel-lined plate to drain excess oil.
- Dust with powdered sugar before serving, if desired.
