Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup milk
- 1 can (10.5 oz) cream of chicken soup
- 1 cup frozen peas and carrots mix
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 can (16 oz) refrigerated biscuit dough
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until soft, then stir in garlic and cook for 1 minute.
- Pour in chicken broth, milk, and cream of chicken soup. Stir until smooth.
- Add shredded chicken, frozen vegetables, salt, pepper, and thyme. Simmer for 10 minutes.
- Cut each biscuit into quarters.
- Gently drop biscuit pieces into the pot, spacing them apart.
- Cover and cook for 12–15 minutes without lifting the lid too often.
- Check dumplings are cooked through, then gently stir and serve hot.
Notes
- Use rotisserie chicken for added flavor and convenience.
- Reduce broth slightly for a thicker consistency.
- Add fresh parsley at the end for brightness.
- Stir in a bit of heavy cream for a richer dish.
- Reheat with extra milk or broth to loosen the texture.
