Ingredients
- 1 lb ground turkey
- 2 medium zucchinis, diced
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup freshly chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook for 3–4 minutes until soft and translucent.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Add ground turkey, breaking it up with a spoon. Cook for 5–6 minutes until fully cooked and no longer pink.
- Mix in diced zucchini, oregano, paprika, salt, pepper, and red pepper flakes. Cook for another 5–7 minutes until zucchini is tender but not mushy.
- Sprinkle chopped parsley over the top and serve hot.
Notes
- Don’t overcook the zucchini to keep it from getting mushy.
- Swap turkey with chicken or lean ground beef for variation.
- Add vegetables like bell peppers or cherry tomatoes for extra color.
- Top with cheese for a richer flavor.
- Serve with rice, pasta, or cauliflower rice for a full meal.
