Description

A quick and healthy one-pan meal made with lean ground turkey, zucchini, and flavorful spices. Perfect for busy weeknights or meal prep.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup freshly chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until soft and translucent.
  3. Stir in the garlic and cook for 30 seconds until fragrant.
  4. Add ground turkey, breaking it up with a spoon. Cook for 5–6 minutes until fully cooked and no longer pink.
  5. Mix in diced zucchini, oregano, paprika, salt, pepper, and red pepper flakes. Cook for another 5–7 minutes until zucchini is tender but not mushy.
  6. Sprinkle chopped parsley over the top and serve hot.

Notes

  • Don’t overcook the zucchini to keep it from getting mushy.
  • Swap turkey with chicken or lean ground beef for variation.
  • Add vegetables like bell peppers or cherry tomatoes for extra color.
  • Top with cheese for a richer flavor.
  • Serve with rice, pasta, or cauliflower rice for a full meal.
