Description

Soft, buttery coconut bars topped with a bright and tangy lime frosting, inspired by Starbucks bakery treats.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded sweetened coconut
  • 1/2 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 12 tablespoons milk (as needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Cream butter and sugar together until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla and coconut extracts.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add dry ingredients to wet mixture until just combined.
  7. Fold in shredded coconut.
  8. Spread batter evenly into prepared pan.
  9. Bake for 25–30 minutes until lightly golden and a toothpick comes out clean.
  10. Cool completely before frosting.
  11. For frosting, beat butter until smooth.
  12. Gradually add powdered sugar, then mix in lime juice and zest.
  13. Add milk as needed to reach spreadable consistency.
  14. Spread frosting over cooled bars and let set before slicing.

Notes

  • Use fresh lime juice for best flavor.
  • Do not overmix batter to keep bars soft.
  • Cool completely before frosting to prevent melting.
  • Add toasted coconut on top for extra texture.
  • Adjust lime zest for stronger citrus flavor.
