Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded sweetened coconut
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 2 tablespoons fresh lime juice
- 1 tablespoon lime zest
- 1–2 tablespoons milk (as needed)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla and coconut extracts.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture until just combined.
- Fold in shredded coconut.
- Spread batter evenly into prepared pan.
- Bake for 25–30 minutes until lightly golden and a toothpick comes out clean.
- Cool completely before frosting.
- For frosting, beat butter until smooth.
- Gradually add powdered sugar, then mix in lime juice and zest.
- Add milk as needed to reach spreadable consistency.
- Spread frosting over cooled bars and let set before slicing.
