Ingredients
- 2 cups watermelon, cubed
- 2 ripe peaches, sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup feta cheese, crumbled
- 1 tablespoon lime juice, freshly squeezed
- 1 teaspoon honey
- 1 tablespoon olive oil
- 1 pinch salt
Instructions
- Cut the watermelon into bite-sized cubes and slice the peaches into thin wedges.
- Place the watermelon and peaches in a large mixing bowl.
- Add the chopped mint leaves and gently toss to combine.
- In a small bowl, whisk together the lime juice, honey, olive oil, and a pinch of salt until smooth.
- Drizzle the dressing over the fruit and gently toss again to coat evenly without crushing the peaches.
- Sprinkle the crumbled feta cheese on top and give it one final light toss before serving.
