Description

Ingredients

  • ½ cup milk
  • 1 cup raisins
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ cup butter, softened
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups cinnamon applesauce
  • 1 cup walnuts, chopped
  • 8 ounces cream cheese
  • ½ cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine milk and raisins; let them soak.
  3. Line and spray a 9×13‑inch pan with parchment and nonstick spray.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves; set aside.
  5. In a large bowl, cream together softened butter, sugar, and brown sugar until light and fluffy.
  6. Add eggs and vanilla; beat until combined.
  7. Slowly add dry ingredients to the butter‑sugar mixture; mix just until combined.
  8. Add applesauce; stir on low until just combined.
  9. Add raisins with milk mixture and walnuts; fold in until just combined.
  10. Pour batter into prepared pan and bake for 30–35 minutes, until a cake tester comes out clean.
  11. Allow cake to cool completely.
  12. Make the frosting: beat together cream cheese and softened butter until smooth.
  13. Add powdered sugar; beat on low until mostly combined.
  14. Add heavy cream, vanilla extract, cinnamon, and salt; mix on medium until smooth and creamy.
  15. Frost the cooled cake with cinnamon cream cheese frosting using a spatula.

Notes

  • You can bake this recipe in a bundt pan, loaf pan, or as muffins.
  • If you want to skip frosting, simply dust the cake with powdered sugar.
  • For smooth frosting, ensure the cream cheese is at room temperature to avoid lumps.
