Description
Filipino Garlic Rice, also known as sinangag, is a simple and flavorful fried rice made with day-old rice, garlic, and oil. Fragrant, lightly crispy, and savory, it is the perfect way to transform leftover rice into a comforting side dish that pairs beautifully with breakfast, lunch, or dinner.
Ingredients
- 4 cups cooked white rice, preferably day-old and chilled
- 6 cloves garlic, minced
- 3 tablespoons vegetable oil
- 1/2 teaspoon salt, or to taste
Instructions
- Break up the cold rice with your hands or a fork to remove any large clumps.
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and cook gently until light golden and fragrant, stirring constantly to prevent burning.
- Add the rice to the pan and stir well to coat evenly with the garlic oil.
- Press the rice lightly against the pan to allow some parts to crisp slightly.
- Season with salt and continue cooking for 5 to 8 minutes, stirring occasionally, until heated through and lightly toasted.
- Taste and adjust seasoning if needed, then serve warm.
Notes
- Day-old chilled rice works best because it is drier and fries better.
- Watch the garlic carefully as it can burn quickly.
- You can add a tablespoon of soy sauce for deeper flavor.
- Top with a fried egg or add cooked proteins for a heartier meal.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a pan with a splash of oil to restore crispiness.
