Ingredients
- 2 large cucumbers, sliced
- 2 cups cherry tomatoes, halved
- 200 grams fresh mozzarella balls (or 2 large mozzarella balls, cut into chunks)
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze or balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and slice the cucumbers into thin rounds.
- Cut the cherry tomatoes in half and place them in a large bowl with the cucumbers.
- Add the mozzarella and gently toss to combine.
- Tear fresh basil leaves and sprinkle over the salad.
- Drizzle olive oil and balsamic glaze over the mixture.
