Description

A flavorful and comforting one-pan meal featuring tender chicken and golden potatoes tossed in garlic, butter, and Parmesan cheese. Perfect for a quick weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add butter and remaining olive oil. Stir in garlic and cook until fragrant.
  4. Add potatoes, season with salt and pepper, and cook covered for 12–15 minutes, stirring occasionally, until tender and golden.
  5. Sprinkle Parmesan cheese over the potatoes and stir to coat.
  6. Return chicken to the skillet, nestling it among the potatoes. Cook for 2–3 minutes to warm through.
  7. Garnish with fresh parsley and serve hot.

Notes

  • You can substitute chicken thighs for chicken breasts for extra juiciness.
  • For extra flavor, squeeze fresh lemon juice over the dish before serving.
