Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 small onion, chopped
- 4 cups green cabbage, shredded
- 1 medium carrot, sliced
- 4 cups vegetable broth
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook for 3–4 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add shredded cabbage and sliced carrot, stirring well to combine.
- Cook for about 5 minutes to slightly soften the vegetables.
- Pour in vegetable broth and water.
- Season with salt, black pepper, paprika, and dried thyme.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until cabbage is tender.
- Stir in lemon juice and adjust seasoning if needed.
- Garnish with fresh parsley and serve warm.
Notes
- Add potatoes, rice, or beans to make the soup more filling.
- For extra protein, include chickpeas or white beans.
- Add chili flakes for a spicy kick.
