Description

A simple, comforting garlicky cabbage soup made with tender vegetables, aromatic garlic, and a light flavorful broth—perfect for a cozy and nourishing meal.


Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 4 cups green cabbage, shredded
  • 1 medium carrot, sliced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until softened.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add shredded cabbage and sliced carrot, stirring well to combine.
  5. Cook for about 5 minutes to slightly soften the vegetables.
  6. Pour in vegetable broth and water.
  7. Season with salt, black pepper, paprika, and dried thyme.
  8. Bring to a boil, then reduce heat and simmer for 20–25 minutes until cabbage is tender.
  9. Stir in lemon juice and adjust seasoning if needed.
  10. Garnish with fresh parsley and serve warm.

Notes

  • Add potatoes, rice, or beans to make the soup more filling.
  • For extra protein, include chickpeas or white beans.
  • Add chili flakes for a spicy kick.
  • A splash of cream or grated cheese can make it richer (if not vegan).
