Description

This Greek Chicken with Lemon and Feta is a zesty, flavorful Mediterranean dish featuring juicy marinated chicken, tangy lemon, and creamy feta cheese. It’s quick to prepare, perfect for weeknights, and pairs well with various sides.


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. In a large bowl or zip-top bag, combine the olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  2. Add the chicken to the marinade and ensure it is well coated. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Preheat the oven to 400°F (200°C) or heat a grill pan over medium-high heat.
  4. Remove the chicken from the marinade and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Transfer the cooked chicken to a plate, sprinkle with crumbled feta, and garnish with fresh parsley.
  6. Let the chicken rest for a few minutes before slicing and serving.
