Ingredients
- 1.5 pounds boneless, skinless chicken thighs (or breasts)
- 2 tablespoons olive oil
- Juice of 1 lemon (about 2 tablespoons)
- 1 teaspoon lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- In a large bowl or zip-top bag, combine the olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Add the chicken to the marinade and ensure it is well coated. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Preheat the oven to 400°F (200°C) or heat a grill pan over medium-high heat.
- Remove the chicken from the marinade and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Transfer the cooked chicken to a plate, sprinkle with crumbled feta, and garnish with fresh parsley.
- Let the chicken rest for a few minutes before slicing and serving.
