Description

A creamy and comforting green bean casserole made with tender green beans, a homemade mushroom-Parmesan sauce, and topped with crispy French fried onions.

Ingredients

  • 1 pound frozen green beans
  • ½ cup diced onion
  • 1 tablespoon minced garlic
  • 1 cup finely diced button mushrooms
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2½ cups half and half
  • 1 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and black pepper, to taste
  • 2 cups French fried onions

Instructions

  1. Preheat the oven to 350°F and lightly grease a 2-quart baking dish.
  2. Steam the frozen green beans according to the package instructions, drain, and set aside.
  3. In a skillet over medium heat, sauté mushrooms, onion, and garlic until tender, about 5 minutes. Remove from heat and set aside.
  4. In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes until it forms a light roux.
  5. Slowly whisk in the half and half, stirring constantly until the sauce thickens, about 3 minutes.
  6. Remove from heat and stir in the Parmesan cheese, Italian seasoning, salt, and pepper.
  7. In a large bowl, combine the green beans, sautéed vegetables, and creamy sauce.
  8. Transfer the mixture to the baking dish and top with French fried onions.
  9. Bake for 30 minutes, until hot and bubbly with a golden topping.

Notes

  • Use fresh green beans for more texture.
  • Canned green beans are softer but convenient.
  • Add shredded cheddar for a cheesier version.
  • Use cream instead of half and half for a richer sauce.
  • Prepare in advance and add the onion topping just before baking.
