Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella or cheddar cheese
- 0.5 cup tomato sauce
- 0.5 cup spinach, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat and cook diced onion until softened.
- Add minced garlic and cook for about 1 minute until fragrant.
- Add ground turkey and cook until browned, breaking it apart.
- Stir in paprika, oregano, cumin, salt, and black pepper.
- Add tomato sauce and chopped spinach, simmer for 2–3 minutes.
- Spread diced sweet potatoes evenly in the baking dish.
- Layer the cooked turkey mixture on top of the sweet potatoes.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake for another 10–15 minutes until sweet potatoes are tender and cheese is melted.
Notes
- Dice sweet potatoes into small, even cubes for faster cooking.
- You can substitute ground chicken for turkey.
- For a dairy-free version, omit cheese or use a plant-based alternative.
- Add black beans or bell peppers for extra nutrition.
