Description

Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella or cheddar cheese
  • 0.5 cup tomato sauce
  • 0.5 cup spinach, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat and cook diced onion until softened.
  3. Add minced garlic and cook for about 1 minute until fragrant.
  4. Add ground turkey and cook until browned, breaking it apart.
  5. Stir in paprika, oregano, cumin, salt, and black pepper.
  6. Add tomato sauce and chopped spinach, simmer for 2–3 minutes.
  7. Spread diced sweet potatoes evenly in the baking dish.
  8. Layer the cooked turkey mixture on top of the sweet potatoes.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil, sprinkle cheese on top, and bake for another 10–15 minutes until sweet potatoes are tender and cheese is melted.
