Description

A cozy, from-scratch chicken and dumplings recipe made with tender chicken, hearty vegetables, and fluffy dumplings, all simmered in a rich, savory homemade broth. Ready in just 30 minutes, it’s perfect comfort food for chilly evenings.


Ingredients

  • 1.5 lbs chicken breasts (or thighs, leftover cooked chicken, or rotisserie chicken)
  • 6 cups water
  • 2 tbsp Better Than Bouillon Chicken
  • 4 tbsp salted butter
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 yellow onion, diced
  • 1/4 cup all-purpose flour
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups Bisquick
  • 2/3 cup milk (whole or 2%)

Instructions

  1. Combine water and Better Than Bouillon in a microwave-safe bowl, heat for 3 minutes, stir, and set aside.
  2. In a large pot, sauté carrots, celery, onion, and butter over medium heat for 10 minutes.
  3. Stir in flour until vegetables are coated, then gradually add broth and bring to a boil.
  4. Add shredded chicken, Italian seasoning, garlic powder, onion powder, salt, and milk. Reduce heat to low and let simmer.
  5. Mix Bisquick with garlic powder and onion powder, then gently stir in milk. Let batter rest for 1–2 minutes.
  6. Drop spoonfuls of dumpling batter into the simmering soup, cover, and steam for 15 minutes without lifting the lid.
  7. Carefully flip dumplings and cook uncovered for an additional 2–3 minutes.
  8. Remove from heat and serve hot.
