Description

Honey BBQ Chicken Rice is a flavorful and hearty dish that combines tender grilled or baked chicken glazed in a sweet and smoky honey BBQ sauce, served over a bed of seasoned rice. Perfect for a quick dinner or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups water or chicken broth
  • 1 tablespoon butter (optional)
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. In a small bowl, mix BBQ sauce and honey. Set aside.
  2. Season chicken breasts with garlic powder, paprika, salt, and pepper.
  3. Heat olive oil in a skillet or grill pan over medium heat.
  4. Cook chicken for 5-7 minutes on each side until fully cooked and lightly browned.
  5. Brush honey BBQ sauce over the chicken and cook for an additional 2-3 minutes until glazed. Remove from heat and let rest.
  6. In a saucepan, bring water or chicken broth to a boil. Add rice and butter, reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
  7. Fluff rice with a fork and serve topped with sliced honey BBQ chicken.
  8. Garnish with parsley or green onions if desired.

Notes

  • You can use store-bought or homemade BBQ sauce.
  • Chicken thighs can be used instead of breasts for a juicier texture.
  • For extra flavor, marinate the chicken in BBQ sauce for 30 minutes before cooking.
