Description

A fresh and flavorful salad made with tender chicken tossed in a sticky honey hot sauce, then served over crisp greens, juicy tomatoes, cucumber, carrots, red onion, feta, and parsley.


Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/3 cup honey
  • 2 tablespoons hot sauce
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a small bowl, whisk together the honey, hot sauce, olive oil, soy sauce, garlic powder, and smoked paprika until smooth.
  2. Heat a pan over medium heat and add the cooked chicken.
  3. Pour the honey hot sauce over the chicken and stir well to coat.
  4. Cook for 3 to 5 minutes, stirring occasionally, until the chicken is heated through and slightly caramelized.
  5. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  6. Top the salad with the warm honey hot chicken.
  7. Gently toss if desired, then sprinkle with crumbled feta cheese and chopped fresh parsley before serving.

  • Rotisserie chicken works well for a quicker version.
