Description

Quick and flavorful chicken tacos coated in a sweet and tangy honey mustard sauce, then topped with fresh vegetables and cheese for an easy weeknight meal.


Ingredients

  • 2 boneless skinless chicken breasts (about 450 g), cut into strips
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt (optional)

Instructions

  1. Cut the chicken breasts into thin strips so they cook evenly and absorb the sauce well.
  2. In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, garlic powder, smoked paprika, salt, and black pepper until smooth.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the chicken strips and cook for 5 to 6 minutes, stirring occasionally, until the chicken starts to brown and is nearly cooked through.
  5. Pour the honey mustard sauce into the skillet and stir well to coat the chicken.
  6. Cook for another 2 to 3 minutes, until the sauce thickens slightly and glazes the chicken.
  7. Warm the tortillas in a dry skillet or microwave until soft and flexible.
  8. Assemble the tacos by dividing the honey mustard chicken among the tortillas.
  9. Top with shredded lettuce, diced tomatoes, shredded cheese, cilantro, and sour cream or Greek yogurt if desired.
  10. Serve immediately while warm.

Notes

  • Use chicken thighs instead of chicken breasts for extra juiciness.
  • Add avocado, guacamole, pickled onions, or shredded cabbage for more texture and flavor.
  • Mix in hot sauce or chili flakes if you want a spicier honey mustard sauce.
