Ingredients
- 2 boneless skinless chicken breasts (about 450 g), cut into strips
- 2 tablespoons olive oil
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon whole grain mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small flour or corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream or Greek yogurt (optional)
Instructions
- Cut the chicken breasts into thin strips so they cook evenly and absorb the sauce well.
- In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, garlic powder, smoked paprika, salt, and black pepper until smooth.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken strips and cook for 5 to 6 minutes, stirring occasionally, until the chicken starts to brown and is nearly cooked through.
- Pour the honey mustard sauce into the skillet and stir well to coat the chicken.
- Cook for another 2 to 3 minutes, until the sauce thickens slightly and glazes the chicken.
- Warm the tortillas in a dry skillet or microwave until soft and flexible.
- Assemble the tacos by dividing the honey mustard chicken among the tortillas.
- Top with shredded lettuce, diced tomatoes, shredded cheese, cilantro, and sour cream or Greek yogurt if desired.
- Serve immediately while warm.
Notes
- Use chicken thighs instead of chicken breasts for extra juiciness.
- Add avocado, guacamole, pickled onions, or shredded cabbage for more texture and flavor.
