Description

A simple, traditional Irish Tea Cake with a soft, tender crumb and light buttery flavor, perfect for enjoying with tea or coffee.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 tablespoon lemon zest (optional)
  • 2 tablespoons coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan. Line with parchment paper if desired.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and lemon zest if using.
  6. Gradually add dry ingredients to the wet mixture, alternating with milk, mixing gently until just combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Sprinkle coarse sugar on top if desired.
  9. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pan briefly, then transfer to a wire rack to cool completely.
