Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1 tablespoon lemon zest (optional)
- 2 tablespoons coarse sugar for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan. Line with parchment paper if desired.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and lemon zest if using.
- Gradually add dry ingredients to the wet mixture, alternating with milk, mixing gently until just combined.
- Pour batter into prepared pan and smooth the top.
- Sprinkle coarse sugar on top if desired.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan briefly, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep the cake light and tender.
- Use room temperature ingredients for best texture.
- Lemon zest adds a fresh flavor but can be omitted.
- Try adding berries or sliced apples for variation.
- Dust with powdered sugar after cooling for a simple finish.
