A rich, creamy, and comforting keto beef stroganoff made with tender beef, mushrooms, and a low-carb sauce, perfect for a satisfying meal without breaking your diet.
Ingredients
- 1 lb (450 g) beef sirloin or ribeye, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225 g) mushrooms, sliced
- 1 cup (240 ml) beef broth
- 1 teaspoon Dijon mustard
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup (120 ml) sour cream
- 1/4 cup (60 ml) heavy cream
- 1/2 teaspoon xanthan gum (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium-high heat and sear the beef slices for 2–3 minutes until browned. Remove and set aside.
- In the same skillet, add butter and sauté the chopped onion until soft.
- Add garlic and mushrooms, cooking until mushrooms release moisture and turn golden.
- Pour in beef broth, Dijon mustard, paprika, salt, and pepper. Simmer for 5 minutes.
- Lower heat and stir in sour cream and heavy cream until combined.
- Add xanthan gum if desired and mix well to thicken the sauce.
- Return beef to the skillet and cook for another 2–3 minutes until heated through.
- Garnish with fresh parsley and serve.
Notes
- Use tender cuts like sirloin or ribeye for best results.
- Xanthan gum is optional but helps thicken the sauce.
- Add Worcestershire sauce or chili flakes for extra flavor.
- Serve with cauliflower rice or zucchini noodles for a keto-friendly meal.
- Avoid freezing as the sauce may separate.
