Description

Comforting and portion-friendly lasagna roll ups made with tender noodles filled with a creamy cheese mixture, baked in marinara sauce and topped with melted mozzarella.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook the lasagna noodles according to package instructions. Drain and lay flat to prevent sticking.
  2. In a bowl, mix ricotta cheese, 1 cup mozzarella, parmesan, egg, garlic powder, Italian seasoning, salt, and pepper until smooth.
  3. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  4. Spread the cheese mixture evenly over each noodle, then roll each noodle tightly.
  5. Place rolls seam-side down in the baking dish.
  6. Pour remaining marinara sauce over the rolls and sprinkle with remaining mozzarella cheese.
  7. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, until cheese is melted and bubbly.
  8. Let cool slightly, garnish with parsley if desired, and serve.

Notes

  • You can prepare the roll ups a day in advance and refrigerate before baking.
  • Add cooked ground beef or sausage for a meat variation.
  • Mix spinach into the ricotta for a lighter, veggie-packed version.
  • Try alternative cheeses like cottage cheese or add pesto for extra flavor.
