Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda

- 3/4 cup unsalted butter, softened

- 2 tablespoons fresh lemon juice

Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Mix in the egg, then add the lemon zest, lemon juice, and vanilla extract. Stir until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Scoop small portions of dough and roll them into balls.
- Coat each dough ball in powdered sugar and place them on the prepared baking sheet, leaving space between each cookie.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on a wire rack before serving.
Notes
- Fresh lemon juice gives the brightest and most natural flavor, but bottled lemon juice can be used if needed.
