Description

Crispy baked lemon pepper wings tossed in a buttery sauce with fresh lemon zest, lemon juice, and cracked black pepper for a bold, tangy, and satisfying flavor.


Ingredients

  • 2 pounds chicken wings, split into flats and drumettes
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper or place a wire rack over the baking sheet.
  2. Pat the chicken wings completely dry with paper towels to help them crisp up.
  3. In a large bowl, toss the wings with baking powder, salt, garlic powder, and onion powder until evenly coated.
  4. Arrange the wings in a single layer on the prepared baking sheet or rack.
  5. Bake for 40 to 45 minutes, flipping halfway through, until the wings are golden brown and crispy.
  6. While the wings bake, mix the melted butter, lemon zest, lemon juice, and black pepper in a bowl.
  7. Transfer the hot wings to a large bowl and pour the lemon pepper sauce over them.
  8. Toss until all the wings are fully coated.
  9. Garnish with chopped fresh parsley if desired and serve hot.

Notes

  • Patting the wings very dry is the key to achieving crispy skin.
  • Do not overcrowd the baking tray or the wings may steam instead of roast.
  • For a stronger lemon flavor, add extra lemon zest just before serving.
  • You can add honey for a sweet-tangy variation.
  • Add cayenne pepper or chili flakes for extra heat.
  • These wings can also be cooked in an air fryer at 200°C (400°F) for 20 to 25 minutes.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 180°C (350°F) for 10 to 15 minutes to keep them crispy.
