Ingredients
- 2 pounds chicken wings, split into flats and drumettes
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon freshly ground black pepper
- 3 tablespoons unsalted butter, melted
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper or place a wire rack over the baking sheet.
- Pat the chicken wings completely dry with paper towels to help them crisp up.
- In a large bowl, toss the wings with baking powder, salt, garlic powder, and onion powder until evenly coated.
- Arrange the wings in a single layer on the prepared baking sheet or rack.
- Bake for 40 to 45 minutes, flipping halfway through, until the wings are golden brown and crispy.
- While the wings bake, mix the melted butter, lemon zest, lemon juice, and black pepper in a bowl.
- Transfer the hot wings to a large bowl and pour the lemon pepper sauce over them.
- Toss until all the wings are fully coated.
- Garnish with chopped fresh parsley if desired and serve hot.
Notes
- Patting the wings very dry is the key to achieving crispy skin.
- Do not overcrowd the baking tray or the wings may steam instead of roast.
- For a stronger lemon flavor, add extra lemon zest just before serving.
- You can add honey for a sweet-tangy variation.
- Add cayenne pepper or chili flakes for extra heat.
- These wings can also be cooked in an air fryer at 200°C (400°F) for 20 to 25 minutes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven at 180°C (350°F) for 10 to 15 minutes to keep them crispy.
