Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup Lucky Charms marshmallows (plus extra for topping)
Instructions
- Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add dry ingredients to the wet mixture, mixing until a soft dough forms.
- Gently fold in Lucky Charms marshmallows.
- Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them about 2 inches apart.
- Press extra marshmallows on top of each cookie.
- Bake for 8–10 minutes, until edges are lightly golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- Chill the dough for 30 minutes for thicker cookies.
- Add white chocolate chips or sprinkles for variation.
- Avoid overmixing to keep cookies soft.
- Do not crush marshmallows while folding.
- Use parchment paper to prevent sticking.
