Description

This marinated cheese appetizer with salami and pickles is a bold and zesty no-cook party starter, combining creamy cheese, spicy cured meat, and crunchy pickles in a tangy herb marinade.


Ingredients

  • 8 oz cheddar or Monterey Jack cheese, cubed
  • 6 oz sliced salami or pepperoni, cut into bite-sized pieces
  • 1 cup mini dill pickles, sliced or whole if small
  • 1/4 cup olive oil
  • 2 tbsp red or white wine vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the ingredients by cubing the cheese, slicing the salami if needed, and slicing or leaving the pickles whole if small.
  2. In a large bowl or jar, whisk together olive oil, vinegar, garlic, crushed red pepper flakes, oregano, salt, and pepper.
  3. Add the cheese, salami, and pickles to the marinade and toss gently until well coated.
  4. Cover and refrigerate for at least 4 hours, or preferably overnight for enhanced flavor.
