Description

Milk brioche is a soft, buttery, and slightly sweet bread, perfect for breakfast, snacking, or as a base for sandwiches and French toast. It features a rich texture thanks to eggs, butter, and milk in the dough.


Ingredients

  • 3 1/4 cups (400g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tsp salt
  • 1 tbsp instant yeast
  • 3/4 cup (180ml) warm milk
  • 3 large eggs, room temperature
  • 1/2 cup (115g) unsalted butter, softened
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Instructions

  1. In a large bowl, mix the flour, sugar, salt, and instant yeast.
  2. Add the warm milk and eggs to the dry ingredients and mix until a dough forms.
  3. Knead the dough for about 10 minutes until smooth and elastic.
  4. Add the softened butter gradually, kneading until fully incorporated and the dough is shiny and smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 to 1.5 hours or until doubled in size.
  6. Deflate the dough and divide it into equal parts. Shape into balls or a braid and place in a greased loaf pan.
  7. Cover and let rise again for about 45 minutes until puffy.
  8. Preheat the oven to 350°F (175°C).
  9. Brush the top with egg wash (1 egg mixed with 1 tbsp milk).
  10. Bake for 25–30 minutes, or until golden brown and cooked through.
  11. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can prepare the dough a day in advance and let it rise overnight in the fridge.
  • Great when toasted with jam or used for sandwiches.
  • Can be frozen after baking for later use.
